dinner: polenta with swiss chard & sausage

This week in our CSA basket, we got a lot of greens. (I suppose it's because the season is still young, but it don't bother me none- I could eat salad ev-er-y. night.) Anyway, among the greens was baby Swiss Chard, so that was the perfect excuse for me to make one of my favorite dinners. I say "favorite" because it's super tasty, but also because it takes all of ten minutes to make and BOOM- dinner's ready.

I don't have a recipe to link up to, because it was one of those "had it in the pantry" discoveries, but basically all you need is:

Sausage (any kind will work, this time I used Al Fresco- brand Sweet Apple Chicken Sausage)
Swiss Chard (this time I used baby, but I've also used regular)
Chicken (or Vegetable) stock, 32 oz.
Polenta, 1 Cup
Olive Oil
Salt, Pepper
Optional: Garlic (this was another thing in our CSA basket this week, so I figured I'd use it!)
Optional: Cheese/Butter to mix into Polenta

1| Slice up the sausage on the diagonal and fry up.
2| Set the sausage aside and, in the same pan, heat a little oil and saute the (crushed/minced) garlic for a minute or two. Add the Swiss Chard, season with salt and pepper, and heat until wilted (takes 2-3 minutes)

 3| Pour the 32oz. Chicken Stock into a pot and bring to a boil. Add 1 cup polenta and remove from heat (unless you enjoy having little welts all over your skin)Stir until thickened, 1-2 minutes. (If you like, add a tablespoon or two of butter and half a cup or so of cheese right to the pot and mix until melted- it's a delicious addition.)
4| Spoon polenta into bowls and top with the greens and sausage.
5| Like I said, BOOM- it's that easy. Dinner's ready.
Probably serves 4 (but if you're big gluttons like Jon and me, it's more like 2)
